Peanut Butter Cup Protein Pudding

I spend a lot of time in the gym. Training for my second bikini competition, I’m at the gym 6 days a week to lift heavy weights. Part of making sure that the time I spend lifting is most effective, is refueling with the proper nutrition when I finish. Why? Your body needs the carbohydrates and protein to replenish what it used and build muscle. I’m simplifying a bit, but that’s the main idea.

When I hit the gym early in the day, I almost always have a post-workout smoothie. However, I’ve been doing fasted cardio in the morning recently, so my strength session in the evening. That change in timing has me craving something a little different, something more like dessert.

That’s where this post-workout pudding recipe came in! I finished my evening workout a few weeks ago and was craving the flavors of peanut butter and chocolate. Since I didn’t have fat scheduled for my post-workout meal, I reached for my stash of peanut flour. I wanted to keep Vega protein powder in the mix for the added BCAAs and Glutamine, so I combined the two for the best of both. A little stevia to sweeten things up was all the extra flavor needed to satisfy my craving, while hitting my fueling needs!

This is one of those recipes that is almost too simple to share, but I decided that you could decide for yourself. I pair this with a pile of fresh fruit, to add whole food carbs and round out the meal. And really, who has the energy to whip up anything complicated after a good sweat session at the gym, anyway?

Instructions
  1. Mix together peanut flour and protein powder. Sprinkle stevia and mix together. Add water, a little at a time, mixing until the desired consistency. I like to make my pretty thick for a rich pudding texture, but you could add a little extra water and use it as a topping. Serve with fresh fruit for a complete snack.
