I have to start with a confession. There is no watercress in this salad.
Not only did I make multiple trips to multiple grocery stores, but I even made a last minute trip on Sunday afternoon. It was the only time I left the house all day, since it was blowing snow all day. Yes, I know it’s mid-May, but apparently the weather doesn’t realize that. It has been beautiful and warm all month (including Saturday), but a winter storm blew in late Saturday night to give us last blast of winter. Silly Colorado.
I hope you’ll forgive my lack of real watercress and appreciate the intent behind the salad. I am confident that the salad would taste just as fresh and delicious with the real thing. And if it happens to be cold where you are too, I hope this helps bring a breath of spring air into your kitchen.
