A few weeks ago, we headed for a drive in the mountain to immerse ourselves in the beautiful Fall colors – which in Colorado is mainly the brilliant yellow on our aspen trees. It’s always a stunning view and well worth the drive (even though I’m not a huge fan of driving).
After our drive, we were looking to refuel and passed a local jerky truck (which is fairly common in this area). They offered all sorts of different proteins – including a wild boar we had to try! We both agreed it was the best jerky we’d ever tasted and the flavor was something we had to replicate. We considered pork as the protein (which I think would also be good), but landed on a salmon recipe for a different spin!
This recipe calls for using the grill, but you can get a similar outcome in the oven if you prefer.
- 2 portions Salmon
- 1 cup cubed pineapple
- 2 Tbsp soy sauce or tamari
- handful sliced jalapenos
- Blend pineaple and soy sauce until smooth, using a blender or food processor. Pour over salmon in a tupperware container and refrigerate for at least 2 hours.
- Pre-heat grill to 400 degrees. Place salmon directly on grill and top with a few slices of jalapenos.
- Cook for 10 minutes and remove from grill. Serve with your favorite veggies for a healthy dinner!
As with most of our fish recipes, we choose Sizzlefish (affiliate) for our fish & seafood. They are always high quality, pure, untreated, and portioned correctly. I find when I buy fish at the store, the portions are a little too big and I end up wasting some of the fish.
