It’s no secret that I love KALE.
I add to smoothies, mix it into pancakes, and make a LOT of kale salads. In most cases, I don’t even pay attention to the ingredients when I make a kale salad dressing. As long as there’s a little oil and something acidic, it’s almost always good.
But every once in a while, there’s a dressing that someone posts that I actually want to make. A delicious combination of ingredients that I don’t think I’ve made before. Even better if it’s created by someone I know has similar taste. Someone who’s even hosted MMAZ while I was away on vacation.
So on Sunday morning, I decided to whip up this delicious Zesty Peanut Dressing and massage it into my last bunch of kale. Quick. Easy. And even delicious served on the side of a savory breakfast plate.
Because when you love kale as much as I do, there’s really no reason that a delicious salad can’t be part of breakfast. Who makes up “the rules” about what is breakfast appropriate anyway?
As I expected, this dressing is delicious and has just the right amount of garlic for me. I almost always double the garlic when I make recipes, but I trusted the creator in this case and was not disappointed.
