I haven’t eaten a packaged cereal bar in years. I remember getting some in college, but I was always hungry a few minutes after I finished eating them. They are usually so high in sugar, low in protein, and filled with lots of ingredients I can’t pronounce. Not exactly my idea of a good breakfast.
Thankfully, Sarah created these super easy bars for last week’s Raisin challenge and I wanted one immediately. Throw in a runny egg and you have a breakfast that tastes a bit like dessert and actually keeps you satisfied for hours!
I couldn’t find the Cinnamon Raisin Peanut Butter called for in the original recipe, but I did find a Blueberry Cinnamon Walnut Nut Butter that tastes as good as it sounds. The texture may be a bit different than the original, since my bars didn’t hold together as well as Sarah’s, but they taste so good it doesn’t matter!
Are you drooling yet? Head over to Sarah’s to get the full recipe now.
And now it’s the time to see what others cooked up for this week’s challenge! In case you are new to MMAZ, the goal is to cook a meatless recipe that features one of this month’s ingredient. You are encouraged to cook one of the recipes shared during the “create” week, but you choose any recipe that features one of the ingredients (Check out the queso recipes and raisin recipes). If you join the fun, make sure your visit at least a few other participants to help build our little community and share the wealth:
