This weekend I decided the house didn’t feel like Fall. All the trees outside have decorated for the season, with more colors that I remember seeing in the past few years. Vibrant yellows, bright reds, burnt orange, and a few green leaves hanging on. It’s like looking at a painting when you look out the window.

We had a ladies event at church on Friday, that inspired me to do something about it. I always love when the house is decorated, but it always feel like it’s so expensive to do it “right”. At the event, they had tables decorated for Thanksgiving and Christmas – everything from plates, glassware, tablecloths, and centerpieces – which they gave away throughout the evening. When someone asked where the plates were from, they went from table to table and explained they were from Wal-Mart, Dollar Tree, King Sooper, and Hobby Lobby. Really? I would have never looked at those stores for decorating!

So on Sunday afternoon, I made the rounds and found a few things at each store. For $30, the house feels so much warmer! It’s amazing what a few plates, table runners, and fake leaves can do.

In the spirit of Fall, I wanted this week’s Meatless Mondays from A-Z creation to be brimming with Fall flavor. I had a slightly different taste in mind when I started making this nut butter, but what came out is better than what I had in mind. It’s almost like a Fall-Gingerbread-Brownie. That’s a bit of a mouthful, so I shortened it to a Fall Spice Nut Butter. I know you’re going to LOVE this one!

 

Fall Spice Nut Butter {MMAZ #53}

Ingredients
  • 1 cup almonds
  • 1/2 cup cashews
  • 1 tablespoon cocoa powder
  • 1/4 cup pumpkin
  • 1 1/2 teaspoon pumpkin pie spice
  • 2 teaspoon maple syrup
Instructions
  1. Preheat oven to 300 degrees.
  2. Spread almonds & cashews onto jelly roll pan & roast for 15 minutes. Remove from oven and allow to cool.
  3. Once cooled, add nuts to food processor. Mix until smooth butter is formed, scraping the sides occasionally during the mixing process. Once butter is smooth, add remaining ingredients and mix until smooth. Store in an airtight container.
