You may have noticed from my recipes that I’m a big fan of Almond Milk! It’s been my favorite non-dairy milk for years and I don’t see that changing anytime soon.
One thing you may not know is that Silk makes Almond Milk! I have always associated Silk with soy milk, but have recently learned about their Pure Almond offerings. In fact, their Unsweetened Pure Almond is the lowest calorie option on the market – at a mere 30 calories per serving! The original version is only 60 calories, lower than the other Almond Milks I’ve seen.
Silk is currently hosting 30 Recipe Rethink, where they asked 30 bloggers to rethink some of their favorite recipes to include 30-calorie Silk Pure Almond. I use Silk Pure Almond for everything – from cereal to recipes. This weekend, I used Silk Pure Almond to create a variation of Heather’s Snickerdoodle Protein Pancakes.
I made just a few tweaks to the recipe, to make it work for my mostly plant-based diet and what I had on hand:
- Silk Pure Almond instead of Milk
- Extra 1/2 cup Silk Pure Almond, to balance the thicker consistency of my protein powder
- Extra 1/2 teaspoon of cinnamon
- Egg Replacer instead of Egg
- Maple Extract instead of Butter Extract
I also added ricemallow fluff both between the pancake layers and on top, just to take this breakfast really over the top!
