How To Press Tofu and Create a Tofu Scramble

One of my favorite breakfasts (and sometimes Brinner) is a Tofu Scramble. It’s such an easy way to be creative, use all the yummy veggies in the fridge, and create something delicious! I can’t remember ever liking scrambled eggs anywhere near as much as I adore tofu scramble.

But let’s take a step back for just a few minutes.

You may have just thought,  “But I don’t like Tofu”.

The problem with tofu is that many people don’t really know how to make it, but they keep making it anyway. I admire the dedication to keep trying, but it’s also caused many people to think that tofu is textureless and flavorless. When made correctly (which is easy!), it’s such an amazingly versatile food!

So, let’s start with a quick How-To on pressing tofu the “old fashioned” way. The only equipment you need is cutting boards, heavy stuff (like cookbooks), and a knife.

 

If you follow the instructions in the video above, you’ll be ready to start making a Tofu Scramble! This week, I looked in my fridge and saw a Mexican theme staring me in the face. So that’s what I created – a Mexican Scramble.

Mexican Scramble

Ingredients (4 servings)

  • 1 block extra firm tofu, pressed (see video for pressing tofu here)
  • 1 large red bell pepper, diced
  • 1/4 cup Bragg’s Aminos
  • 4 tbsp nutritional yeast
  • 1/2 tsp turmeric
  • 1/2 tsp cumin
  • 1 tsp curry powder
  • 2 cloves garlic
  • 1/4 medium onion, diced
  • 2 chipotle peppers
  • 1 tsp chipotle sauce
  • 1 can black beans, rinsed and drain
  • 1 cup mushrooms, diced or sliced
  • 1 cup tomato, diced
  • 1 cup spinach chopped
  • 1 cup avocado, diced
  • 4 whole wheat tortillas

Instructions

Crumble tofu into small chunks into medium bowl.

Add Bragg’s, Nutritional Yeast, curry, tumeric, and cumin to tofu. Mix well until combined.

Heat pan coated with cooking spray over medium-high heat. Add onion & garlic to pan and stir until onion begins to soften and garlic is fragrant.

Add red pepper and mushrooms to pan and stir to combine. Cook until mushrooms are beginning to soften.

Add chipotle peppers & sauce to pan and stir to combine.

Add black beans and stir. Cook for 1-2 minutes.

Add tofu mixture and mix well. Use spatula to crush tofu as it cooks for 1-2 minutes.

Add diced tomatoes and spinach to pan. Continue to stir until spinach starts to wilt.

Add diced avocado and mix together.
