The last time we featured chocolate on Meatless Mondays from A-Z, I failed miserably. When I chose Xocolatl for this week’s ingredient, it was my chance to redeem myself. So when I found myself in the kitchen on Sunday on the fourth failed attempt, I was honestly frustrated.

With my final 1/3 cup of applesauce, I tried again and prayed it would work this time. My goal was for a chocolate cake that everyone can enjoy without sacrificing your diet. Gluten free, dairy free, egg free, soy free – a protein cake that all my friends could enjoy!

With no extra ingredients to waste, I photographed the last batch before testing. With the final photos taken, I brought the bowl to Kirk for approval and told him he had to be honest.

Since I’m sharing the recipe, you can guess the outcome of that conversation, right? The full story is that Kirk didn’t like the sauce that I used (he’s not a fan of bitter chocolate), but loved the cake. I really enjoy bittersweet chocolate, so the sauce is perfect for my tastes. If you’re not a fan of that type of chocolate, just leave it off.

 

Single Serving Double Chocolate Protein Cake {MMAZ #69}
Recipe Type: Snack

Ingredients
  • 20 grams Peanut Flour Defatted
  • 20 grams Vega All-in-One Nutritional Shake
  • 1 tablespoon baking stevia
  • 1 teaspoon cocoa powder
  • 1/4 teaspoon cornstarch
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/3 cup unsweetened applesauce
  • 1 teaspoon cocoa powder
  • 8 drops vanilla stevia
  • 4 teaspoons water
Instructions
  1. Mix together peanut flour through applesauce in a microwave-safe bowl. Stir well until everything is very well combined and creamy. Microwave on high for 3 minutes.
  2. In a small bowl, mix together cocoa powder through stevia to make a cocoa sauce. Pour sauce over hot cake and serve immediately.

The final product is is a nutritious snack that you can feel good about enjoying! This chocolate protein cake is packed with 18.8g of protein, 30.7g of carbs, and 3g of fat (adding up to 234 calories).

Am I the only one still (basically) living in yoga Am I the only one still (basically) living in yoga clothes?

For at least part of the day, it's just easier to put on yoga pants, sports bra, and a "zoom-appropriate" top. Or a button-up layered over my workout tank. It makes it SO much easier to squeeze in a workout when I have time.

Tell me I'm not the only one who's not going back to work clothes?!

Last Friday, we ventured to a trail near Carbondale for the most beautiful ride with huge wildflowers everywhere. It was a great trail with good climbing, plenty of flow in the middle, and A LOT of switchbacks on the descent. Our first 2 hour ride of the season and it was a blast!

I didn't know it at the time, but it was also the last ride on my Liv mountain bike - because I got a new bike on Sunday! ✨

If you're in Colorado & in the market for a new bike, I highly recommend Over The Edge in Fruita. I test rode 6 bikes & then took the Pivot Mach 5.5 out on the trail to be sure it was the right one. Great experience!!
