Chasing the Sun – a.k.a. Evening Trail Run

Tonight’s run was more exciting than usual. Since I’m not doing the marathon, I’m just trying to get in some good base mileage, nothing fancy, just enjoying being outside.  I took too long getting ready, so I didn’t leave for Kennesaw Mountain until after 6:30. It was so fun to see this view at the beginning of my run, as opposed to pavement:

About 3 miles into the run (about 1 mile after I turned around), I was SURE I was lost. So, I turned around and started running back looking for a turnoff I missed. When I hit a fence I knew was on the right path, I was really confused – did I miss the turn again? I turned around again…very confused. When I hit the stretch I was at last time, I stopped and pulled up my map on my phone – it looked like I was in the right area…hmmm. I ran just a little farther, then I recognized where I was. Doh!

It’s a good thing I wear bright, obnoxious, awesome Zensah calf sleeves and bright, obnoxious Nikes – I practically glowed in the dark! I’m not kidding – look how dark this picture is, but you can still see my legs!

 

Dinner Time!

Once back at home, it was time to make dinner – Pea Daddy’s Jambalaya. Can you guess the cookbook at this point? Yes, Peas and Thank You! Have you bought a copy yet? Why not?! 🙂

I took more pictures than normal during the cooking process – let me know if you like the extra pics or if the end product is enough for you. 

This was another easy recipe. While I threw together the veggies & “sausage”, the rice was cooking away.

Add the liquids and simmer:

Throw in the rice and cook a bit more:

Yum, yum, yum…another winner! We used Chipotle “Sausage” from Whole Foods that added the perfect spice to this meal. Now time to finish up the BLTs for tomorrow’s lunch and head to bed. Hope everyone had a great Thursday!
